PROCEDURE:
1. In main kettle, disperse Ultrathix P-100 into Sequence 1 and mix for 5 minutes at room temperature.
2. Heat Sequence 1 to 70-75°C, slowly add Sequence 2, one ingredient at a time, until well incorporated.
3. In a separate vessel, combine Sequence 3, heat to 70°C, add to main kettle, mix until uniform, until a smooth emulsion is formed, scraping sides often.
4. Start cooling batch with slow mixing.
5. Continue cooling to 35°C.
6. Add Sequence 4, mix until uniform.

pH: 6.0 - 6.5
Viscosity: RVT/TF @ .3 rpm = 900,000 cps ± 10%
Stability: 1 Month at 50°C
